It was my first visit to a Sugar Shack (cabane à sucre Au Pied de Cochon) in Montreal last Easter and it was one of the best gastronomical experiences of my life. Bravo Martin Picard. It was savoury, fatty, artery-clogging goodness all covered in Maple Syrup and just an hour drive from the city into the middle of no where. During the drive, all I could see was an endless field of white snow that met with the sky at the end of the road. Everything from the maple tree farm back yard, to the snowy fields makes this place the perfect Canadian gastro-experience. There were maple martinis, beers and sodas, lobster bisque injected chickens and most importantly, foie gras with pancakes drizzled in none other than Maple Syrup. My favourite was the 2 tiered tray of maple sweets with maple infused Jack daniel shots, maple popcorn, toffee and all the maple treats I could only have dreamed of. Warning: Go on an empty stomach.
